Oatmeal Cookies

Makes about 12 - 15 cookies

INGREDIENTS

1 cup rolled oats

1 cup oat flour or whole wheat flour

2 tablespoon flax meal

1/2 cup vegan butter (or 4 tablespoons apple sauce)

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon allspice or pumpkin spice (optional)

1/4 cup dairy free milk

DIRECTIONS

1) Pre-heat oven to 350 F

2) Small bowl, mix 2 tablespoons flax meal with 3 tablespoons water and let sit for at least 5 minutes

3) If using vegan butter, place in microwave safe mixing bowl and soften butter in microwave for 10-15 seconds

4) Mix all ingredients together in a bowl and add a 1/4 cup of any addition options such as chopped walnuts, mini dairy chocolate chips, chopped almonds, or even 2 tablespoons of chia seeds. Have fun and play around with variations!

5) Place a tablespoon of mixture on parchment or Silpat.

6) Bake for 15 minutes, let cool on pan for one minute

7) Keep in refrigerator to last longer (up to a maximum of 2 weeks in refrigerator)
